2018 Sparkling Blanc de Blanc (extra brut)

100% Estate Chardonnay barrel aged for 13 months then bottled aged on lees for 15 months.  Wonderful aromas of vanilla bean, Citrus and Cognac are evident with green apple and richness on the palate.  Pairs wonderfully with salty foods or stellar on its own.  Due to it being extra brut (only .25% RS), we found that creamy dips or cheeses did not pair particularly well.  Will continue to age beautifully in the bottle.
